Fisherman’s Market halibut are wild, sustainably caught in British Columbia, and weigh 10-15lbs each. Our halibut is processed right off the boat and is filleted at a 65% recovery rate.

Halibut is a very versatile fish making it great for a variety of cooking methods, flavours and spices. The meat is dense and retains its moisture and texture. As a non-oily fish, make sure it doesn’t dry out by not over cooking it.

Fun fish fact: halibut have both eyes on same side of their head and they live on the ocean floor. When they are born, they look like normal fish but as they age, the left side of their head grows faster so the eyes move to the right.
