Classic pan-seared pickerel

Ingredients:

  • 1lb pickerel fillets from your local Fisherman’s Market
  • 2 eggs
  • 3/4 cup flour
  • 1 cup Italian style bread crumbs
  • 1/2 tsp salt
  • 1/4 tsp onion powder
  • 1/2 tsp paprika

Directions:

  1. Lightly beat the eggs in a dish.
  2. In another dish, combine the flour, bread crumbs and seasoning.
  3. Dip the pickerel fillet in the egg and then in the flour mixture.
  4. Add a couple of tablesppons of oil to a pan.
  5. When the pan is hot, add the fish and cook it for about 2 minutes per side, depending on the thickness of the fillet.
