Avocado and smoked char appetizer

Serves: 4-6

Ingredients:

  • 200g smoked arctic char lox (substitute salmon lox if wanted) from your local Fisherman’s Market
  • 7 ounce flatbread square (about ½ a pound or 200 grams)
  • ½ tsp olive oil, plus more for garnish (garnish optional)
  • 4 ounces goat cheese (about 225 grams)
  • 1 tsp capers
  • 1 tbsp minced fresh chives
  • ½ avocado, peeled, pitted and sliced
  • ¼ tsp freshly ground black pepper

Directions:

  1. Preheat oven to 400 degrees Fahrenheit.
  2. Brush flatbread with olive oil and place onto a baking sheet. Bake for about 8 to 10 minutes or until browned and crisped a little. Carefully remove.
  3. Spread goat cheese over flatbread.
  4. Top with smoked salmon, capers, chives, avocado and black pepper.
  5. Cut into 12 pieces. Drizzle with additional olive oil (if desired).
